1. In medium bowl stir together cream cheese, bourbon or apple juice and nutmeg.
2. Toss apple with lemon juice. Stir apple mixture and 3/4 cup of pecans into cream cheese mixture. Shape into 6-inch long roll. Roll in remaining pecans. Serve with crackers. Store in refrigerator.
*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.
