Kellogg's Corn Flakes® cereal and cinnamon add a sweet, crisp coating to tender wedges of sweet potato.
1. Scrub potatoes. Cut lengthwise into quarters. Lengthwise cut each quarter in half.
2. Place egg in shallow dish. Spread half of the cereal on plate or sheet of wax paper.
3. Dip potatoes in egg, then roll in cereal, pressing cereal onto potatoes. Place in single layer on baking sheet coated with cooking spray. Add more cereal to plate as needed. This keeps the cereal dry to it sticks to potato wedges.
4. Bake at 425° F for 23 to 28 minutes or until browned and tender. Serve warm
