Mini Margarita Pizzas

These topped crackers are finger food, giving you just a bite of herb-topped tomato, olives and melted cheese

Ingredients:

  • 48 Sunshine® Cheez-It® Big snack crackers cart
  • 6 ounces fresh mozzarella cheese, sliced
  • 2 medium roma tomatoes, thinly sliced
  • 1/3 cup olive tapenade
  • 1/2 teaspoon dried basil leaves
  • 1/4 teaspoon coarsely ground black pepper

Directions:

1. On 15 x 10 x 1-inch baking pan arrange SUNSHINE CHEEZ-IT Big snack crackers in a single layer.

2. Cut cheese slices into 48 pieces. Cut tomato slices into 48 pieces.

3. Top each cracker with one piece of cheese, about 1/3 teaspoon of the tapenade and one piece of tomato.

4. In small bowl combine basil and pepper. Lightly sprinkle basil mixture over crackers. Bake at 400°F for 3 to 5 minutes or until cheese melts. Serve warm.
