Ingredient
- All-purpose flour 1 1⁄4 cup
- Baking soda 1 tsp
- Salt A pinch
- Eggs 2
- Castor sugar 3⁄4 cup
- Lemon juice 2 tbs
- Vanilla essence 1 1⁄2 tsp
- Grated orange zest 3⁄4 tsp
- Apples dice and caramelised 3
- Pecan nuts 20
- Crushed Kellogg's® Corn Flakes 2 cups
Cooking steps
1. Sift flour, baking soda, cinnamon, and salt into a bowl.
2. In a separate bowl, beat eggs, sugar, oil lemon juice, vanilla essence, and orange zest. Fold in the caramelised apples.
3. Combine the crushed Kellogg's® Corn Flakes with pecan nuts.
4. Spoon half the batter in the muffin cups.
5. Spoon 2 tbs of Kellogg's® Corn Flakes and add the other half of the batter to fill 3⁄4 of the muffin cup.
6. Top the batter with another 2 tbs of the pecan & Kellogg's® Corn Flakes crumbs on top.
7. Bake muffins for 20 mins at 180°C until golden brown.
